Dálvve The Signature Malt

Dàlvve The Signature Malt is something of a milestone in our distillery history. When it was presented in November 2016, it was our first on-going product that stepped into the whisky world. Matured on average for five years in first fill bourbon barrels, medium smoky style at 46% ABV, light yet tasteful, it immediately became a success.

Dàlvve means winter in southern Sami and was our first on going product which can be seen as a tribute to what makes our distillery unique, the changing seasons. In November 2016, the first batch was launched at Systembolaget, (the first time in a 70 cl bottle from our distillery). It was an immediate  success and in April 2017, Dàlvve became part of Systembolaget’s regular range. Dálvve The Signature Malt has been produced continuously in batches since the premiere, holding to the  same recipe, but of course with possible small variations depending on the casks. The base is just over 5 years old Bourbon barrrel matured whisky from 200 liter barrels, of which, about a quarter contains peated malt whisky. The alcohol content is 46% and the whisky, like all of our whiskies is neither coloured nor chill filtered.

Dàlvve is still available at Systembolaget as well as some bordershops and Nordic ferries.

  • 77,7% is between 5,19 – 5,20 years old unpeated whisky from 200 liter 1st fill Bourbon barrels.
    22,3 % is 5,28 years old peated whisky from 200-liter 1st fill Bourbon barrels.

    Dálvve contains no artificial colouring and is non-chill filtered

  • In total 18 200 liter barrels are used in Dálvve batch 06.

    200 liter Bourbon barrels primarily from Heaven Hill and Jack Daniels.
    Until October 2014, our casks have matured in a damp warehouse, where they lost slightly more alcohol than expected. Since October 2014 until bottling, the casks have been maturing in a dry environment in warehouse number 3.

    24/05/2018  18 bourbon barrels containing 2951 kilos of whisky, with an average strength of 61,3% abv, were emptied into our blending tank. There we added water to reach the desired strength of 46% abv.

    Dálvve was bottled 25/05/2018-05-25 giving us 6103 bottles.

    We recommend that Dálvve be aired in the glass for a while. Add a few drops of water to lift the aromas from the glass.

  • Yeast: Fermentis Safwhisky M-1

    Unpeated malt: Pilsnermalt from Vikingmalt in Halmstad.

    Peated malt: Pilsnermalt from Castle Maltings in Belgium.
    Peated to 45 ppm phenol count with peat from Scotland.

    Unpeated barely types: Prestige, Sebastian
    Peated barely types: Tipple, Rosalina, Sebastian

    Process water: From Bålsjön, filtered through sand and carbon filters

    Cooling water: From Ångermanälven

    Included batches:
    Peated: 396B, 410A-416A
    Unpeated 409B, 431A-437A

    Batch size: 1200kg malt

    Average fermentation time: 80 hours in stainless steels washbacks

    Distilled between: 17/01/2013 to 15/03/2013

    First Cut:
    Unpeated spirit: 13 minutes head (foreshots)
    Peated spirit: 30 minutes head (foreshots)

    Second Cut:
    Unpeated spirit: 67 % ABV (20°C)
    Peated spirit: 60 % ABV (20°C)

Dálvve was our first on-going product and is available at Systembolaget all over the country. It is produced batch wise following to the same recipe. Dálvve also has a sherry matured sister which is a limited release.
