2nd Step Collection 02
The second edition in the series The 2nd Step Collection is a lightly smoky combination from bourbon barrels and sherry casks. The majority of the whisky is from sherry casks.
With this we present a bit of a pre-taste of our sherry matured whisky. The oldest whisky is over five years old, which adds a roundness and softness to the taste.
48,15 % is 5,16 years old, unpeated whiksy from 200 liter 1st fill bourbon barrels. 31,26 % is 4,72 years old from 115 liter 1st fill oloroso casks. 12,05 % is 4,91 years old, unpeated whisky from 250 liter 1st fill oloroso sherry casks, final maturation from 09/01/2015 in 55 liter 1st fill oloroso casks. 8,53 % is 4,73 years old peated whisky (43 ppm) from 115 liter 1st fill oloroso casks.
The 2nd Step Collection 02 contains no artificial colouring and is non chill-filtered.
The Bourbon barrels have previously contained Jack Daniels whiskey. The sherry casks at 115 liters is remade from old sherry of Thorslundkagge. The 55-liter and 250-liter sherry cask are made in Spain.
Until October 2014, our casks have matured in a damp warehouse, where they lost slightly more alcohol than expected. Since October 2014 until bottling, the casks have been maturing in a dry environment in warehouse number 3.
18/08/2016 2007 kg of whisky with an average strength of 59,39 % abv was emptied into our blending tank where the alcohol was adjusted to the desired level of 51,2 % ab ahead of bottling.
The 2nd Step Collection 02 was bottled on the 22/08/2016 and 23/08/2016 giving us 5096.
We recommend that The 2nd Step Collection 02 is allowed to breathe in the glass for a few moments to reach its peak. Add a few drops of water to help the aromas develop within the glass.
Yeast: Fermentis Safwhisky M-1
Unpeated malt: Pilsner malt from Vikingmalt in Halmstad.
Peated malt: Pilsner malt from Castle Maltings in Belgium as well as peated malt from Scottish maltsters. Peated to a phenolic level of 43ppm with peat from Scotland
Barely types: Henley, Sébastian, Publican, Scarlett, Quench, Tipple,
Process water: From Bålsjön, filtered through sand and carbon filters
Cooling water: From Ångermanälven
Batches used: 40B-55B, 75A-103B, 124A-129A, 135B-165A

Average fermentation time: 80 hours in stainless steels washbacks.
