Whisky

Distilling is the part of the craft where the distiller really controls the character of the distillate. At High Coast we aim for a fruity raw spirit and because those flavors come early in the process we make our first cut as early as 13 minutes for our unsmoked distillate. The second cut at 67% probably occurs earlier than at any other distillery and prevents heavier substances from accompanying the whisky.
